Cutting Up

Every morning I arrive behind the sushi bar at 10 am. There I spend the 90 minutes before the restaurant opens assembling the bar and preparing fish, vegetables and rice. First I set out two large bricks, wrap them in moist towels, and place my surfboard-sized cutting board atop them. The first time I put together my work area I forgot to use the towels. When Kaji-san saw it he frowned and shook his head.
